We've been enjoying the UNI Men's basketball games! Tonight they won against Witchita State. It has been our 3rd game this season thanks to Dad - that's John (Bryan's dad) in the picture.

We're starting to feel like true Panther fans!

Bryan & I have been trying to do more cooking together. We've been missing one of our favorite restaurants from Denver, WaterCourse - http://www.watercoursefoods.com - and tonight we cooked one of our favorite meals from their menu. Here's the recipe:

Water Course Foods Tomato Coconut Curry Soup

Source: Water Course Foods, Denver, Colorado

Serves 10 to 12

2 cups yellow onions, diced
1 cup celery, diced
1 cup carrots, diced
3 tablespoons garlic, chopped
1 tablespoon fresh jalapeno peppers, chopped
(about 2 peppers, seeded and cored)
1/2 cup fresh ginger, chopped
1 (10 ounce) package shredded cabbage cole slaw
Olive oil to saute vegetables
2 (8 ounce) cans tomato sauce
1 (14.5 ounce) can crushed tomatoes
1 (15 ounce) can coconut milk
3 tablespoons curry powder
Salt and pepper, to taste

Heat a heavy soup pot with 2 to 3 tablespoons oil over medium heat. Add first seven ingredients and saute until onion is translucent.

Add remaining ingredients and mix well. Bring to a boil, cover and lower heat to a simmer.

Christmas came early for @mccartyashley

At 6am I woke Ashley up. Told her it was time. Confused and half asleep, we managed to leave the house at 7am. She had no clue where we were going. I surprised her with an earlier Christmas gift from @EuropaCycle - a hybrid Trek that can't wait to hit the streets of downtown Cedar Falls.

Tree time...

Getting a Christmas tree is one of our favorite parts of the holiday season. So when Bryan got home from work early on Friday, we were off to the tree farm! We were handed a saw as we drove into the parking lot and then took a walk to scout out our tree. There were too many to choose from, but once we had it picked out Bryan did some excellent sawing work and we were done. We went inside to pay and have some cider and cookies while our tree got shook, bound, and tied to the top of our car. It was great! We've included some pictures of our tree experience and the finished product.

Mike Home from Denver!

This past week my brother was home visiting from Colorado! We haven't seen him since we moved so it was awesome having him home for a few days. He left earlier this evening to head back to Denver. It was a fun week and I got kinda sad when it was time for goodbyes. Family is great, that's for sure. Mom made dirty dessert and we even made time to stop over at Grandma and Grandpa's to watch some wrestling...They still love that stuff!

A New Addition to our Basement

Our basement acquired a drum set. Bryan has informed me that he'll constantly be playing mosh-breakdowns...

I'm also going to give Bryan piano lessons so he can re-learn his lost skills. Our house will be full of music!
